It's officially pumpkin season and I'm so ready! Once I make the switch from summer to fall mindset, I'm all in...which means, PUMPKIN EVERYTHING! A couple weeks ago, my friend Kaleigh bought this adorable mini pumpkin waffle maker and I knew we had to do something fun with it! Brunch time!

We gathered our pumpkin supplies and planned a pumpkin brunch! we used Trader Joe's Pumpkin Waffle mix (and the gluten free version was great too!). I'm also a fan of the Kodiak Cakes pumpkin mix!!

The waffle maker isn't super fast, but it was worth it! We had the cutest spread of mini waffles, and topped them with pecans, bananas, maple syrup, AND pumpkin butter! I also want to remake my homemade pop-tarts with this pumpkin butter- it was so good! There is also a skull version of this waffle maker (only $10!), and I think that would be the cutest for a Halloween brunch or a fun party food!

We topped it all off with a dusting of powdered sugar, but I got a little carried away with it, so you can't tell that they're pumpkins anymore, but they were still good! You should definitely make a pumpkin brunch soon! I always think "oh I'll do that next week...it's too early now" and then I miss it! Don't wait or you'll miss your opportunity!
