This easy to make recipe is the perfect crowd pleaser for your Fourth of July gathering!

The Fourth of July is here (which also means my birthday month is here!!). I love celebrating the Fourth of July with a bbq or family cookout and this dessert is the perfect dish to bring over to someone's house! It's easy to make, so cute and festive, and you can create whatever design you want on top! This pizza features a soft sugar cookie crust, a cream cheese frosting, and fresh fruit topping - all good things!

I see "fruit pizzas" at parties all the time, but I don't think I've ever eaten one! Why? They always have kiwi on them for some reason...or grapes?! That just doesn't do it for me....but blueberries and strawberries in a waving flag formation - perfect! I was so excited to cut into this and it did not disappoint! Whether you're taking it to a friend's house or setting up a simple festive display like I did, this dessert is a winner! 

It's truly so simple to make. My toddler helped me! (aka it took twice as long as it needed to, but that's ok!)

The secret to your success is: store bought cookie dough. YES. I love a recipe with a store-bought component to speed things along. If you want to make a homemade sugar cookie base, more power to you!

Ingredients

Cookie:

  • store bought sugar cookie dough (I used Pilsbury break and bakes)

Frosting:

  • 1 block of cream cheese
  • 1 cup powdered sugar
  • 1 stick of butter (1/2 cup)
  • 1 tsp vanilla

Toppings:

  • fruit of your choice. I used about 1/2 pint of blueberries and 1/2 pint of strawberries

Instructions

  1. Press cookie dough into pan about 1/3 inch thick until you have one solid sheet of cookie dough.
  2. Bake according to dough instructions and let cook completely. Do not overbake - we want the cookie to be nice and soft!
  3. Add frosting ingredients to mixer and blend until fully incorporated and fluffy, around 2 minutes.
  4. Frost cookie base and spread an even layer of frosting, covering the whole cookie.
  5. Add fruit in your chosen design and refrigerate until you're ready to serve.
